Just put the line of a form
PATH=your:path:as:usual
somewhere in the beginning of your crontab. See man 5 crontab for more
details; it's described in the first screenful of the manual.
On the other hand, why would you want to do such a thing? What's wrong
with specifying the full path to cvsup?
/usr/local/bin/cvsup [options]
And of course there is absolutely no need for symlinks...
